Our Extraction Lab is equipped with state-of-the-art brewing equipment you need to start your coffee journey on the right foot.

Pull a shot on our Decent DE1CAFE or Kees van der Westen 2-group Spirit, and throw the sample in a centrifuge to measure extraction. Measure your manual brewing skill against an XBloom. Cup coffee samples using different GH/KH combinations. The possibilities are endless!

  • Joseph W. Gonzalez

    INSTRUCTOR

    Widely known in the coffee community as “Tio Joe,” Joseph is a seasoned coffee professional with over 14 years of experience in the specialty coffee industry. For more than eight years, he has competed on the national stage in both Barista Championships and the Latte Art World Championship Open, earning recognition for his skill and dedication to the craft.

    In 2017, Joseph co-founded Espresso State of Mind alongside his business partner, Javier Alvarez. Together, they have played a pivotal role in shaping the New York City coffee scene by organizing local competitions and community-driven coffee events for nearly a decade.

    In addition to his work with Espresso State of Mind, Joseph serves as a coffee consultant, partnering with cafés and hospitality businesses to revamp coffee programs, develop staff training protocols, and establish effective standard operating procedures (SOPs) and cost of goods (COGs) strategies. His expertise and passion for coffee continue to inspire and elevate professionals across the industry.

    Joseph is an instructor for the Tare, Tamp, Pull, Pour, Repeat course.

    INSTRUCTOR

    Paolo is a renowned international roasting instructor and consultant. His projects in North America, Asia, and the Middle East have been hailed as innovative and have been featured in major financial media outlets such as Bloomberg and coffee publications such as Sprudge, Daily Coffee News, and Perfect Daily Grind.

    Paolo has been a featured speaker and coffee instructor, and has been featured in classes in New York, Los Angeles, Japan, the Philippines, and Guatemala.

    In 2021, Sprudge named him one of the "Sprudge Twenty" Honorees: a group of extraordinary coffee personalities who inspire the field of specialty coffee.

    Paolo is an instructor for the Intro to Roasting and Roasting Intensive courses.
